Salad: ​Crispy Chicken Salad

This makes a huge crispy chicken salad is packed with all your favorites and topped with creamy ranch dressing.

  • ½ box (600 grams) Best Value breaded chicken
  • 2 heads lettuce, washed and roughly chopped
  • 4 large eggs hardboiled, then sliced
  • 1 cup cherry or grape tomatoes, washed then halved
  • ¼ onion, thinly slices or 3 green onions, chopped
  • 1 medium avocado, sliced (optional)
  • ½ cup ranch dressing
  • 1 tablespoon lemon juice
  • Chili flakes, optional

Directions for Preparation

  1. Cook chicken according to package directions. Let cool while preparing the other salad ingredients.
  2. Once the chicken is cool enough to touch, remove the meat from the bone and cut into bite size pieces.
  3. Make the dressing. In a small bowl, stir together the ranch dressing, lemon juice and optional chili flakes.
  4. Assemble the salad by placing the lettuce in a large bowl or platter dish.
  5. Top with the rest of the toppings leaving the chicken last.
  6. Drizzle with dressing and serve.
