Dessert: ​Berry Ice Cream Sandwich Cake

This summer cake is so good, make sure to grab your serving before it’s all gone.


  • 2 ¼ cups fresh or frozen berries
  • ½ cup sugar
  • 1 tbsp. lemon or orange juice
  • pinch of salt
  • 24 ice cream sandwiches
  • 2 tubs (About 1 L) frozen dessert whip, thawed

Directions for Preparation

Berry Sauce

  1. If using fresh berries, wash before using. Place the berries in a medium saucepan, add sugar, juice, and salt. Stir until combined.
  2. Bring berry mixture to a boil.
  3. If using fresh berries, boil a full minute. If using frozen berries, boil for 3- 5 minutes. Let cool before assembling cake.  


  1. Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch dish.
  2. Top with a layer of whipped topping, then top with ½ cup berry sauce.
  3. Repeat layering with remaining ice cream sandwiches, whipped topping, and another ½ cup berry sauce.
  4. Cover the dish with aluminum foil and freeze until set, about 30 minutes.
  5. Cut the cake into 12 squares and serve. Top each serving with more berry sauce.
