Dessert: ​Moist Raisin Bran Muffins

This is a classic recipe for moist raisin bran muffins that are packed with fiber and juicy raisins.

  • 2 cups raisins
  • ¼ cup boiling water
  • 1 package (about 900 grams) bran muffin mix
  • 1-2 eggs (check the package directions)
  • About 1 ½ cup milk (check the package directions)

Directions for Preparation

  1. Place the raisins in a bowl with the boiling water. Cover with plastic wrap. Let sit for a minim of 30 minutes to plump up.
  2. Preheat the oven to 375°F. Line 2 muffin tins with paper muffin liners or grease with oil.  
  3. In a large mixing bowl, add remaining ingredients and follow the package directions.
  4. Stir in the plumped raisings.
  5. Pour into the muffin trays.
  6. Bake for 20-25 minutes or when a toothpick inserted inside the middle of a muffin comes out clean.
