Main Course: Hearty Ham and Bean Stew

Ingredients

  • 1 onion, finely chopped
  • 1 celery rib, chopped (optional)
  • 1 carrot, chopped
  • 2 medium potatoes, peeled and cubed
  • 2 cans (398 mL each) baked beans, any flavour
  • 1 cup cubed fully cooked ham or 1 package (about 375 grams) ham deli meat, cubed
  • 1/2 cup water
  • Pepper to taste
  • Shredded cheese to top individual bowls of stew (optional)

Directions for Preparation

  1. Drain some of the liquid from the canned beans.
  2. Place everything in a large pot and bring to a low boil.
  3. Cook stirring occasionally until the potatoes are soft. Add more water if needed. Season with pepper to taste.
  4. Optional: Sprinkle bowls of stew with shredded cheese.
