It's Halloween time and the sweets are plentiful. While it's not terrible to indulge in a treat every once in a while, sometimes parents like to provide healthier snacks for their kids to enjoy. No Fuss Homemade Popsicles

Ingredients

  • 1 ½ cups yogurt, any flavour
  • 1 cup berries, any type
  • 1 cup unsweetened juice, any type

Directions for Preparation

  1. Spoon the yogurt equally into the muffin tin slots.
  2. Top with the berries then the juice.
  3. Make sure to leave a little space at the top, so the foil will not touch the filling.
  4. Cover the whole top of the tray with aluminum foil. This will hold the spoons in place.
  5. Poke a hole in the middle of each muffin slot with a sharp knife. Insert the other end of the spoon into the slot. This will act like the popsicle stick. Repeat for the remaining slots.
  6. Freeze for 3-4 hours.
  7. Remove from the freezer, let sit a few minutes then remove the foil and gently pull out a popsicle and admire the colorful layers!

The kids will love to mix and match their popsicle layers. Equipment needed to make these homemade popsicles is a muffin tin, some aluminum foil, and plastic spoons. If the popsicles do not slide out easily, run hot water over the bottom of the tin.

Strawberry Oatmeal Bars

Ingredients

  • 2 cups strawberries or any berries, roughly chopped
  • 1 cup oats, any type other than the instant variety
  • 1 cup + 1 tablespoon flour, preferably whole-wheat
  • ¼ cup + 2 tablespoons brown sugar, unpacked
  • ½ teaspoon cinnamon or ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ¼ cup + 2 tablespoons non-hydrogenated margarine or butter, melted

Directions for Preparation

  1. Preheat oven to 350 °F.
  2. Place the rack in the center of the oven.
  3. Line an 8” x 8” baking pan with aluminum foil so the foil overhangs two sides like handles.
  4. Place the berries in a pot.
  5. Bring up to a low bubble and let cook uncovered while preparing the oat crumble.
  6. Stir occasionally. In a medium bowl, combine the oats, 1 cup of flour, brown sugar, spice, and salt.
  7. Pour in the melted margarine and stir until the mixture forms clumps.
  8. Set aside ½ cup of the mixture. Press the rest firmly into an even layer in the bottom of the pan.
  9. Pour the berries on top of the crumble bottom.
  10. Sprinkle with the remaining 1 tablespoon of flour then evenly spoon on the reserved crumble topping.
  11. Bake for 35 minutes then broil on low for the remaining 10 minutes or until the crumble topping turns golden brown.
  12. Let the pan cool for 30 minutes then place in the fridge for at least another 30 minutes to set.
  13. Slice and serve alongside a dollop of vanilla yogurt.

This recipe can easily be doubled in a 9” x 13” pan but will need to bake an additional 10 minutes as the bars will be thicker.
