Dessert: ​Blueberry Buckle Cake

The absolute best blueberry cake that has just a hint of sweetness.


  • ¼ cup vegetable oil
  • 2 eggs
  • ¾ cup milk
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • ¼ cup white sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 cups fresh blueberries or thawed frozen blueberries


  • ¼ cup butter or non-hydrogenated margarine, room temperature
  • ¼ cup white sugar
  • ¼ cup all-purpose flour
  • ½ cup plain oats
  • ½ teaspoon ground cinnamon

Directions for Preparation

  1. Lightly grease a 8” x 8” baking dish. Preheat oven to 350° F.
  2. In a medium size bowl, using a hand blender, blend the first four (4) ingredients until combined.
  3. Stir in the flour, sugar, baking powder and salt. Blend for 1 minute. Stir in the blueberries. Note: if using thawed frozen blueberries, drain the blueberry juice before adding them to the bowl.
  4. In another medium bowl, combine the rest of the ingredient. It will be crumbly.
  5. Using your hands, sprinkle the topping over the cake.
  6. Bake for 35-45 minutes or until a knife inserted into the centre comes out clean.
  7. Serve with vanilla yogurt, whipped cream, or ice cream.
