Dessert: Orange Shirt Day Cookies

Ingredients

  • 2 cups oats
  • 1 cup all-purpose flour
  • ¾ cup sugar, white or brown
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg, ¼ teaspoon ground ginger, ⅛ teaspoon ground cloves (optional)
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 3 eggs
  • 1 cup carrots, shredded then chopped into smaller shreds
  • 1 teaspoon vanilla

Directions for Preparation

  1. In a large mixing bowl, mix the dry ingredients: oats, flour, sugar, baking powder spices and salt.
  2. In a medium mixing bowl, stir together the rest of the ingredients.
  3. Combine wet ingredients with dry ingredients and stir until well incorporated.
  4. Let chill in the fridge at least 30 minutes.
  5. Preheat the oven to 350 °F.
  6. Grease a cookie sheet or line with parchment paper or aluminum foil.
  7. Scoop a heaping tablespoon of batter on the cookie sheet. Pat down with the back of the spoon to flatten just a little.
  8. Place cookies 2 inches apart on the sheet. Repeat with the leftover batter.
  9. Bake for 20 minutes. Store in the covered container in the fridge.
