Main Course: ​Hearty Nacho Supper

For this recipe, the nacho toppings are served to each family member in their own bowl with tortillas chips on the side to scoop up the fully loaded mixture. This recipe can easily be doubled.

Ingredients

1 medium onion, chopped

1 sweet pepper, chopped

1 pound ground beef, chicken, or turkey

1 jar (about 400 mL) tomato salsa

1 small can kidney beans, rinsed and drained

1 small can corn niblets, drained

½ to 2 teaspoons chili powder, adjust to your taste

I head romaine or iceberg lettuce, washed then thinly sliced

1 can (250 mL) jalapeno peppers (optional)

1 cup shredded cheese

Directions for Preparation

  1. In a large frying pan, cook the onions, pepper and ground meat on medium heat. Stir constantly breaking up the larger pieces of meat. Drain off fat.
  2. After 15 minutes, add the tomato salsa, beans, corn and chili powder. Heat until the mixture reaches a low boil.
  3. Into each bowl, layer the sliced lettuce, followed by the meat mixture, top with jalapeno peppers (optional) and lastly the cheese.
  4. Serve with tortilla nacho chips on the side for scooping.
