Salad: Mexican Creamy Cabbage Salad

Ingredients

This dish blends the taste of a taco into a filling salad to eat on its own or as side dish.  

  • 1 bag (about 400 grams) coleslaw mix
  • ½ cup canned beans (any type) rinsed & drained
  • 1 small can (about 340 mL) corn niblets, drained
  • ½ cup mayonnaise
  • ½ cup plain yogurt or light sour cream
  • ½ package (about 35 grams) taco seasoning mix
  • 2 tablespoon lemon juice or vinegar

Directions for Preparation

  1. Mix all the ingredients into a large bowl. Add more taco seasoning mix to your taste.
