Salad: Caesar Potato Salad

Ingredients

An easy summer salad to go alongside any family supper. Peeling the potatoes AFTER they are boiled is a real time saver.

  • 8 medium potatoes, washed
  • ½ to ¾ cup Caesar dressing (adjust to your taste)
  • 2 green onions chopped, or 1 to 2 tablespoons finely chopped red or white onion (adjust to your taste)

Directions for Preparation

    1. Place the potatoes in a large pot covered in water.

    2. Bring the water to a boil and cook the potatoes until tender, about 15 to 20 minutes. 

    3. Drain. Top with cold water. Let cool for 5 minutes. Drain again. 

    4. Peel the potatoes by running a dull knife along the skin. Then cut into chunks. 

    5. Place in a large bowl and stir in the rest of the ingredients. Serve warm.
