Main Course: Veg n’ Cheese Casserole

Ingredients

  • 1 bag (500 gram) frozen California mixed vegetables
  • 1 medium onion, finely chopped or 1 teaspoon onion powder
  • 1 cup mayonnaise
  • 1 cup shredded cheese
  • 1 cup crushed Ritz crackers or soda crackers

Directions for Preparation

  1. Boil the vegetables until heated through. Drain well. This step can be done ahead of time.
  2. Preheat the oven to 350 ° F. Grease a medium-size baking dish.
  3. In a large bowl, mix the onion, the vegetables, the mayonnaise, and half of the shredded cheese.
  4. Spread the vegetables mixture evenly into the casserole dish.
  5. In a medium bowl, stir together the leftover shredded cheese and the crushed cracker crumbs.
  6. Sprinkle the crumb mixture evenly over the casserole.
  7. Bake for 30 minutes or until heated through.
