Snack: Pumpkin Spice Pancakes

Servings: 10-12 pancakes

Preparation time: 5 minutes

Cooking time: 20 minutes

Ingredients

These are good any season but taste best on crisp Fall mornings.

  • 2 cups pancake mix
  • 2 eggs
  • ½ cup canned pumpkin pie filling
  • ½ cup – 1 cup milk
  • 2 tablespoons vegetable oil

Directions for Preparation

  1. Add all the ingredients to a medium mixing bowl except the milk. 
  2. Stir in ½ cup of milk. Continue to stir in milk until the batter is easier to stir but not too thin. The more milk added, the thinner the pancake. 
  3. Grease a non-stick frying pan with 1 teaspoon of oil. Heat the pan on medium then add a scoop of pancake mix. 
  4. Important: turn the heat down to low. Once the pancake has set, flip. The heat needs to be low, or the pancake mix will burn very quickly because of the added pumpkin. 
  5. Repeat for the rest of the pancake batter.
