Main Course: Pineapple Pork

Ingredients

  • 2 onions, chopped
  • 4-6 garlic cloves, roughly chopped or 2 teaspoons garlic powder
  • 2 pounds pork stew cubes or diced pork shoulder, trimmed of fat and gristle
  • 1 can (540 mL) pineapple tidbits
  • 2 cups frozen vegetable mix or fresh chopped vegetables like carrots and peppers
  • 2 tablespoons white vinegar
  • 2 tablespoons soy sauce, preferably low sodium
  • ½ teaspoon black pepper

Directions for Preparation

  1. In a large pot, fry the onion, the garlic and the pork together until browned.
  2. Add the rest of the ingredients.
  3. Bring up to a boil, lower the heat and cover.
  4. Cook for about 60 minutes.
  5. Add more pepper or garlic pepper to taste.

Serve over rice or quinoa.

This dish hits the spot when you are craving some homemade Chinese food with the added bonus of being a one-pot meal.
