Main Course: ​Beefy Taco Stew

Ingredients

This one-pot meal is loaded with ground beef, beans, corn, and cheese. Design your own bowl with fun toppings.

  • 1-pound lean ground beef or any ground meat
  • 3 garlic cloves, minced or ½ teaspoon garlic powder
  • 1 medium onion, chopped
  • 1 sweet pepper, chopped
  • 1 can (796 mL) diced tomatoes, preferably no salt added
  • 1 packet (24 grams) store-bought taco seasoning
  • 1 can (about 500 mL) kidney beans, rinsed and drained
  • 1 can (342 mL) corn niblets, drained
  • 2 cups beef broth or water

Top soup with fun toppings like: shredded cheese, diced avocado, guacamole, sour cream, chopped green onion, and crushed tortilla chips.

Directions for Preparation

  1. In a large pot, add the meat, vegetable oil, onions, garlic and sweet pepper. Cook on medium heat breaking up the meat as it cooks.
  2. Once the meat is browned, add the rest of the ingredients. Bring up to a low boil and cover with a lid.
  3. Let cook for 20 minutes.
  4. Serve the stew piping hot with your chosen toppings. Can also serve over cooked rice or noodles for a balanced meal.
