Snack: ​Cheesecake Fruit Sushi

Ingredients

This is an easy kid’s breakfast or simple potluck food to whip up right before the party starts. Fruit and vanilla cream cheese get rolled together in a tortilla then sliced into sushi rounds.

  • 1 package (250 grams) cream cheese, at room temperature
  • 2 teaspoons sugar
  • ½ teaspoon vanilla extract
  • 8 medium tortillas, preferably whole wheat
  • 1 cup strawberries, thinly sliced
  • 3 kiwi, peeled & thinly sliced or 1 cup canned pineapple tidbits, drained & finely shopped
  • 2 – 3 bananas, thinly sliced

Directions for Preparation

  1. Using a hand blender or a fork, blend together cream cheese, sugar, and vanilla extract until smooth.
  2. Spread each tortilla with about 2 tablespoons cream cheese mixture, spreading all the way to edges.
  3. Arrange put a thin layer of fruit (about a heaping tablespoon each) on each tortilla, but not right to the edge. Top with banana slices.
  4. Tightly roll up tortilla, pushing in any filling that slides out.
  5. Set seam side down on plate and press to seal.
  6. Freeze 10 minutes to set.
  7. Cut into sushi-size pieces and serve! Optional to drizzle with chocolate sauce or melted Nutella.
