Salad: ​Creamy Corn Salad

Servings: 6 cups or twelve, ½ cup servings

This super easy side dish tastes great with anything grilled. This recipe can easily be doubled.

  • 5 cups frozen corn
  • 1 green pepper, diced (optional)
  • ½ cup shredded cheese
  • ½ cup sour cream or plain yogurt
  • ½ to 1 teaspoon sugar (adjust to your taste)
  • ½ cup mayonnaise
  • Salt and pepper to taste

Directions for Preparation

  1. Place the frozen corn kernels in a pasta strainer. Run warm water over the kernels until thawed. Drain well.  
  2. In a medium bowl, stir together the corn and the green pepper.
  3. In a separate bowl whisk together the rest of the ingredients.
  4. Refrigerate until ready to serve.
  5. Stir in the mayonnaise sauce into the corn and serve right away.
