Snack: Smokey Oyster Dip

This addictive dip served with crackers is so simple and easy to make, and great for an appetizer at a gathering. Oysters happen to be a great source of iron and calcium. Eat up!

·       1 (85 grams) can smoked oysters, drained and chopped very finely

·       1 package cream cheese, at room temperature*

·       2 tablespoons mayonnaise

·       1 teaspoon lemon juice

·       Optional: 1/2 cup olives, chopped

Directions for Preparation

  1. Chop the oysters very finely. Use a food processor if you have one.  
  2. Stir all the ingredients together until smooth. 
  3. Store in the fridge at least 2 hours before serving.
  4. If too thick, stir in some water before serving.

* A tip to soften the cream cheese if you forgot to leave it out at room temperature for a few hours is to unwarp it from the foil and microwave for about 30 seconds.
