Salad: ​Fully Loaded Potato Salad

Loaded Baked Potato Salad is a classic potato salad recipe with a twist. All your favorite baked potato flavors like bacon, cheddar cheese and sour cream make this a perfect side dish!


·       8 medium potatoes, peeled and diced

·       ½ cup mayonnaise, preferably low fat

·       ½ cup sour cream or plain yogurt

·       1 teaspoon mustard, preferably Dijon

·       ½ cup shredded cheese

·       ¼ cup slices green onions

·       ¼ cup bacon bits

  1. Wash the potatoes well and cut out any dark spots or bruises. Place in a large pot and cover with water.
  2. Bring up to a boil. Cook for 8 to 10 minutes or until the potatoes are cooked but not yet soft.
  3. Dunk in cold water. Leave the potatoes sitting in the cold water while you prepare the other ingredients. The longer you let the potatoes sit, the better.
  4. In a large bowl, stir the other ingredients until combined. 
  5. Lastly, drain the potatoes well. Toss into the bowl.
  6. Stir gently until coated with the sauce.  Keep refrigerated until ready to serve. 

For a lighter dish, use light sour cream or plain yogurt instead of regular sour cream.
